Ingredients

1 Tablespoon extra-virgin olive oil

2 Slices of bacon

16 Ounce of mustard greens

2 Garlic cloves

2 Scallions

Red pepper flakes

1 Teaspoon sugar

1/3 Cup chicken broth

2 Tablespoon red wine vinegar

Process

1. Heat olive oil on medium high heat. Add bacon and cook stir frequently until crisp for 3-4 minutes.

2. Stir in mustard green and scallion. Cook until wilted. Add sliced garlic, red pepper flakes, sugar and salt for season. Cook for 30 seconds until the garlic is fragrant.

3. Pour chicken broth and vinegar, cover and reduce the heat to medium low. Cook for 10 minutes and add more broth and cook until the greens are tender. Serve with a little additional vinegar to taste.
